Whats u[ with the 1000 T-rex suvoniers and then the like 100 rocket ones in the storage room?

You can use a few of the rockets in the quest "Among the Stars" or whatever it's called. The one at the REPCONN Test Site.

Well I have 100(+) of those, what about the T-Rex Suvoniers?

The souvenirs are just that, leftover souvenirs. I don't think there's anything you can do with them.

Are you kidding? There's tons you can do. You can fill up a swimming pool and go play in them. You can put them into roller skates and have races. You can leave a trail from Novac to New Vegas to delight travellers. You can sneak one into the pocket of everyone you come across. You can use them to set off traps. I'm just getting started.

Come to think of it. During the "Do quests for the Boomers to make them like you" I came across some Boomer kids playing. They mentioned they'd like toys from the outside. One of them pretends to be a dino and another pretends to be launching a rocket. I wanted to try and give them these toys, but I forgot and that save is long gone. Perhaps you can use one of them (or another toy) to give to the Boomer kids for some rep.

how do i get them to set traps off? and putting them in the pocket of everyone sounds fun and chalenging, I will do it to enemys too!

Is there real reason.s for them though?
