Just use the intercomm next to the door, he unlocks it then.

As for checking companions heatlh, "use" him to bring up the wheel and highlight the stimpack option, or even simpler, target them with VATS.

When in actual combat, if you're a certain distance from a companion (not close enough to get the 'Talk' prompt & not tooooo far away) you can see their health meter on-screen if you put your cursor over them. Other than that, what Tojka said.
