Well, basically I can't set crysis to my native resolution, which is 1680x1050
I could do it with the demo, but the retail version doesn't let me pass 1360x768
I want to know if there's a console command, utility or any other way to force the resolution I want or maybe a fix to that.

You can try editing the game.cfg file to get that resolution. It might not work, but its worth a shot. I am able to set it to that resolution just fine.

By the way, (assuming Windows 7) the file should be in this spot:
C:\Users\\Saved Games\Crysis2

I tried it, but when I start the games it sets the resolution to 1280x1024, so that doesn't work
