So, I ordered my Collector's Edition through Amazon 4 days ago, and it's just now telling me that my game won't ship until tomorrow, and I won't receive it until the 25th-27th. Anyone know of any way to change this, so I'll receive my game today?

Sorry, now's too late. Here in the UK, it told us that buying 1st class would mean getting it on the day of release (this Friday). svcks that they didn't do it for where you live mate. But look on the bright side - you're still getting it sooner than me!

I'm pretty sure that non-US folks are going to have to sit and watch the delighted posts of people who got this game on the 19th for a couple days.

~seriously, once its "shipping", it becomes immutable. If it has not actually shipped yet then you can alter the shipping method, but I doubt you can get it before the 20th even with next day.
