The first trader I approach seems like he's only selling me things how do I sell off stuff!?

There is a section below the merchant's stuff that is your stuff. If you can't get there press <- a few times to close the merchant's stuff. It will display only the things you can sell. Navigate to what you want to sell and press X or the equivalent. There doesn't seem to be any haggling.
