On Potions

Hi!

Been playing Skyrim for ~12 hours total now, and one thing I can tell, that the difficulty has been raised since Fallout3 or TESIV. (as a side note, I would like to point out that killing a dragon isn't too hard compared to killing a damn saber cat)
So when I was on my way to the top of a mountain, and one snowy saber cat jumped at me, I took my battleaxe, shouted flames at the cat and swing my weapon as hard as I could, but nothing could stop the beast and soon I was lying dead. Every time I tried.
And you know what could make it 10 times easier to kill that beast? If I would have drank a dew health potions. But I didn't and below I'll point out my problem below, you can skip the initiative text up here!

So you fight for your life, and you lose, there's the end of the line, the orc's axe is striking down you, you only have a split second to live and you...drink 4 health potions (or 8 or 12 or 300). You are renuvenated, and the blow doesn't end you, of course it hurts you so you drink another 2 potions just to make sure, you'll win the fight now without any problems. Exept this whole case is the problem: the potions have 0 cooldown, 0 arm time 0 time to take effect. I always thought this one is a major flaw.
This doesn't only seems ridicolous, but instead of promoting the planning of a battle, or actively using your skills promotes the hoarding of potions. My idea was, that this time the game will surely handle potions differently, of course there won't be a cooldown, nor delay on the effect after consumption, but you would have actually drink it. I've imagined my character grabbing the bottle, breaking down it's next in a hurry, and drinknig the potion. For me, this drink infinite potions in 0 time would have ruined every game that has it.
But I come up with a solution: I'll pretend that I can't drink potions whenever I want and when I drink I'll try to wait a few second (to play that I'm actually drinking it). But with the difficulty risen, it's rally annoying to being killed by a damn cat, who was probably killed by so many who just drank 8 potions while the beast chewed on their neck.

So please, the next time when you can help it make potion consuming a bit more "realistic". It's ridiculous, promotes hoarding, makes other wise challenging battles trivial and boring OR makes fights nigh impossible and frustating. Or am I the only one who plainly hates how the potions work?
