I completed the quest which offered me a 1 handed axe or a 1 handed sword, but the axe does 2+ more damage, and im curious as in if the sword is faster/less stamina or if its just visual different?

You can swing swords faster than axes. According to the loading screen hint:

Speed of swinging:
Sword > Axe > Mace

Swords and axes also have their own perks in the 1H kill tree. Swords do more critical damage, and axes do bleeding or something. Maces ignore enemy armor.

The 1 handed sword is the second fastest melee weapon and yes its faster then the 1 handed axe

Visual difference mostly but depends on quest. Needs to be in spoilers section. I'm sure it might be different.

Swords are definitely faster, not sure about fatigue difference though.

PS. which 1 hander is fastest? Dagger i presume?

Yes, but I heard that there where a bug with them, and that daggers don't get the 1st perk bonus from 1h, so pretty crappy... idk...
