Everytime I kill a dragon they drop dragon scales and bones. Should I hold onto these?

They're used for crafting. The problem is that they weigh so damned much.

And you can't use them to craft until your Smithing skill is 100 and you have the perk, or when you drink some potions. So when you first get a hold to these, sell them, and when you have like.....90 something Smithing, hold on to these.

So sell them at first? Is there an infinite number of Dragons so I can farm more in the future?

Best thing you can do is dont progress in the main story at all until you buy a house...which should right around level 3 to 5 (depending on spend happy you are) because you dont really need to buy anything yet. Once you have a house its handy to get a companion to use as a mule, after all for every hit your companion does on an enemy thats one more swing or cast you have to do to level. Once you have a house just start storing all your craftables in it so you can start leveling your crafting skills after level 10. Your first 10 levels should be combat focused or the game will start to become VERY difficult. Put a perk or 3 into enchant or smithing but save the rest for your dps tree.

Sorry, got off track a bit but you should hold onto em if you plan on crafting in the future....sell if not, but a house is a must have in any ES game. Or marry someone and their house becomes yours! Question is, do they get into your stuff?.....

Marrying a woman and moving into her house is much cheaper. If you're lacking gold, go that route. It's what I did. I'm pretty spend happy. Also, you get added bonuses for marrying as well like daily income and what not. Hold onto the dragon scales/bones if you want to craft later. Otherwise, they get a decent amount of gold if you sell them,

Is there anyone in the game that can make you dragonscale armor or is the only way of attaining the dragon armor through your own crafting?

I`m really bad at leveling professions. Is there any blacksmith that can do it for me in exchange of gold?.

Honestly smithing is really easy to level, just make iron daggers and hide/leather bracers over and over.

I just don't want to put perk points into smithing past steel and arcane blacksmith

They're also used for a short quest. Just follow the main quest and you'll find out soon enough
