Hello, I'm new on these forums and I have a question for anyone that knows:

Would having a spell equipped in one hand (not activated) affect being detected while sneaking?

Nope. The NPCs don't see the light the equipped spells are emitting. You can even ready the spell (or smth, push the mouse button without releasing it).
