Non-combat skills and leveling up

So I am an Elder Scrolls virgin, Skyrim is my first ES game. I have been reading the forums to pick up some random info/tips and in almost every topic the subject of skilling up non-combat skills gets mentioned as being detrimental to your character. I created a warrior for my first character and am skilling up 1H, block, heavy armor and smithing atm. I'm level 19 with approximately 60 1H, 45 block, 55 heavy armor and 70 smithing.

So my question is, how are improving non-combat skills detrimental to your character? Enemies don't scale to your character level do they? Because I am one-shotting bandits and skeletons that previously took a few hacks to kill. I just don't see how it could matter how you gain your levels, as long as you aren't stupid and try to rush to harder parts of the game when your combat skills are low. As long as you are fighting enemies appropriate to how strong your combat skills are it shouldn't matter should it?

some enemies (not all) scale to your level.

You will still meet the low level stuff in deungones, but more often they will get replaced by high levelled versions as yo ulevel up.

You only lvl18.....I believe the problems start when you get around lvl 30+
