Everytime i try it i just smack them as i would normally :(

Also what is the best way to level up Pickpocketing ? I seem to be leveling very slowly in it

Stealth finishing moves seemed only to happen for me when wielding a single dagger and dealing an overwhelming amount of damage (while undetected, of course). Noticed it once I got the Assassin's Blade perk.

They have to be human like characters, like bandits for example (ghosts of humans work too), just go up behind them while sneaking, with only a dagger in one hand, dont be detected and just press attack and it should do a fallout-esq instant kill move. Just dont try to do it with a bear.

Just a dagger in one hand? Surely you can dual-wield and get a "Stealth Kill" animation as long as you only press one of the attack buttons?

Regarding pickpocketing, I think the exp earned is scaled with either the gp value of what you take or the difficulty of obtaining it. Seems like I gain more experience from taking very valuable items than from just grabbing gold or arrows.

It works while dual wielded. I've had mixed experiences with stealth kills, sometimes they go off, sometimes they don't (on identical enemy types). My theory is that it has something to do with your positioning on the opponent or it's completely random.

I'm playing a stealth bower and one-hand dueler.

To do a stealth kill equip just one blade (or dagger)
sneak up to a target (don't forget to press shift while sneaking near, noise can distract target)
HOLD the attack button and you will get the animation

I'm not sure but the level for the stealth kill have to be the same or below yours.

As for pickpockets just try to perk up as much as you can, and the try your luck by stealing a lot of things that have good chance of stealing

It doesn't matter what is in your left hand as long as your dagger is in your right hand.
