I am building a new computer. My video card has an HDMI input, as does my monitor. I also have the options for DVI or VGA. I know HDMI also does sound, but I want the sound to continue playing through my sound card and speakers. Will hooking my video card to my monitor override my soundcard for audio?
HDMI devices with Audio capability will show up as an Audio device in your Device Manager. For example my AMD Radeon 4870X2 will have
AMD High Definition Audio Device listed.
As Narmy stated, as long as you don't make this the primary audio device it won't change anything.
I use a Creative XFi card and use a HDMI connection on my monitor (well DVI to HDMI, as the GPU doesn't have a HDMI port on the back).

Edit: Just so you know audio is mapped over the DVI connection on the Radeon. Though it only works when the receiving source is HDMI or another device that maps HDMI functionality over DVI.
