The new xboxes were made for a reason; the old xbox has overheating issues that they fixed with the slim. Old models dont handle games like skyrim very well.
I'm having the same problem. The game doesn't actually freeze, it just takes a really long time to get to the normal loading screen. Next time it does it wait it out for 30 seconds to a minute and it should get back on track.

I have a slim and it still freezes from time to time.
That's why I'm so confused. The model doesn't matter.
My other friend plays Xbox like all day and shares it with his brother, so the Xbox is on most of the day. Also his Xbox is like 4 years old, his game hasn't frozen once....
It tends to freeze during loading screens for me, now I can pretty much expect it to freeze for me.
EDIT: Does anyone know what could be causing this? I am running the game from the disc, and don't have it installed to my hard drive. On top of that, I have 6 save games that I alternate between, 2 for each of my 3 different characters- but i don't know if that has anything to do with it.
I have my brightness turned up pretty high and my Sound settings are all set pretty high.

I got one of the new xboxes. Game still freezes all the time. It didn't freeze at all the first 10-15 levels though, but now everything freezes like crazy.

I'm starting to think it has something to do with quests.
It didn't freeze for the first 10-15 levels for me either, but now I have a ton of Miscellaneous quest and side quests piled up, and I think it's causing a lot of stress for my CPU because the scripting needed with Radiant Story and what not.
Freezing can be a symptom of overheating. Make sure your 360 is as well ventilated as possible. I had one freeze, and could feel that the 360 was hot, so I sat it up in the open-air next to the TV and haven't had a problem since. Mileage may vary, but it seems to have worked for me... so far.
I dont think it's game related. You can see on xbox forums ppl who have freezes constantly whether they play any game or not. My slim 250GB also froze a few times in very short period, but after that didnt freeze for like 5 months. Guess it's very random issue.
when i jumped on skyrim today on xbox it was fine for me and never froze and was on it for 8 hours. my friend jumps on it after and it freezes around 2 minutes after he loads in his character. we tried many different ways on what could be the problem but it never worked. we tried : we turned off the auto saves, we transferred his save to a hard drive because he was using a 16GB flash drive, and we let the xbox cool down for about 15 min. none of this stuff worked, we think the cause for the freezing was the quest he was on "hitting the books" for the college of winter hold. so hes making a new character as 'im typing this and has not froze.......yet, so any help would be grateful
I'm 22 hours in, I've had one freeze; on a loading screen. My xbox is on all day and I have an old Elite, I don't know why it's freezing on you... All these problems seem to be completely random.
