The only series I found that was remotely like them in style and gameplay was the Gothic series. No where near as good mind you, but similar. Then again, I bought the Gothic Universe collection and never could get 1 to run, 2 was insanely difficult, and 3 caused me massive lag, so I've never finished any of them.

Only one I can think of is Kingdoms Of Amalur Reckoning but Reckoning isn't 100% like TES or Fallout as Reckoning isn't a true open world game.

Dragon's Dogma could be another one although that doesn't come out until the end of May and that's more of a party based single player game. You'll be playing with Pawns instead of just a single character. It's probably possible to go without pawns in that game although the enemy will probably do a number on you.

Gothic 3 with community patch is decent, a huge open world with interesting handcrafted places.
Two Worlds 2 is also a TES wannabe that is still far from the production value you're used to as a TES fan, but it is big and has sailing and a lot of effectively viable character builds.

As mentioned, there's the Gothic series. They're actually quite a nice set of games and in some instances, I prefer them over TES. There's also the other sequels such as Risen and Arcania.

There's also The Witcher, one and two. While they're not open world games, they present a pretty amazing game world with great combat and storyline.

Don't forget the original Dragon Age Origin, while not a open world RPG. Its one of the better RPG's made to date. But be sure to stay away from Dragon Age 2 that game svcks.

Arcania...Two Worlds... seing these godawful titles in a thread about games similar to TES makes me realize what a great and empty niche this actually is... Bethesda is literally sitting on a pile of gold.

Dragon Age 2 actually wasn't that bad of a game, the main reason why everyone seems to be so vehemently against it is because it just wasn't anywhere near as good as Origins. It still had great characters, dialogue and interesting lore.

There is nothing like Bethesda's style. Your best bet is going for Morrowind and Daggerfall. Morrowind is my favorite TES game and it shows the potential of the medium best.

I think if there is a secret ingredient that makes these games awesome, you can perhaps find it in these games too:

Never played Divinity 2 but it uses the same game engine as oblivion and fallout 3, its an open world rpg too. Other then that I know nothing of it (of how good it is). I keep meaning to order it but im going to wait a while, also it has no drm like steam, its just the simple disc check if even that.

Gothic 3 is unplayable without mods.

You won't find anything quite as massive and detailed outside of the TES series, unfortunately. Your best bet is either other TES games you may not have played or perhaps delving into some old school open world game series, one of my favorites being Might & Magic. VI and VII in particular are fantastic. Additionally, if you're willing to look to the East, Final Fantasy XII and the Dragon Quest series are rather open-ended.
