Is there any use for Dragon Scales or Dragon Bone further in the game or just sell it and have some coins?

They are used by the Smithing skill to craft Dragonbone Armor (Heavy) and Dragonscale Armor (Light). If you do not intend to develop smithing, they can safely be sold and are a good source of money.
