Guardian Stone: The Atronach, The Lord, The Lady
Weapon: 2H mace
Necessary Perks:
11 2H weapons (Barbarian, Skull Crusher, Champion's Stance, Great Critical Charge, Sweep)
10 Light Armor (all of them)
5 Block (Shield wall)
7+ Alchemy (Alchemist, Physician, Benefactor)
5+ Sneak ( 3xStealth, Backstab, Deadly Aim)
5+ Archery (5xMarksman or 4x Marksman+Eagle Eye)
6 Smithing or Enchanting, if you do not want either put perks into Alcheny/Sneak/Archery
Total 49
How to Play:
Barbarians do not use any magic so they must rely on their physical power and combat cunning to defeat their foes. In most cases charging like a maniac against stronger groups of enemies will get you killed, so sneak upon them so you can charge the mages or archer without provoking grunts, or use a bow to snipe them from close-medium range and immediatly charge them before they can heal.
Your main attack will be Great Critical Charge, it guarantees a critical hit whenever you are charging. This is why you should use maces, since they are the slowest hitters. Never use swords for this builds.
Use hit and run tactics, either by sprinting away and turning around and charging if you have the energy, or use dragon shouts to create distance. Learn to use corners, if you are overwhelmed immediatly run behind one and wait for enemies to come to you one by one.
About race choice/guardian stones/perks
Nords and Orcs are equal even if orc racial is stronger for almost every other melee build.
The choice of Stone depends on you, you can choose between 50 spell resistance, 50 armor & 25 spell resistance or 25% increased HP and stamina regen.
Smithing is good early game when you can kill dragons and make dragon armor, while enchanting takes time to level and is better as your last skill. Sneak has some interesting perks like silent running (suprise buttsecks) and reseting combat, alchemy has poisons and Archery allows you do deal more burst damage.
