I don't know where to look to see which is the latest update I have for Skyrim. Where do I look when I load the game? Thanks.

You can do it in two ways.

1) Go to Steam\steamapps\common\skyrim and rightclick on TESV.exe and check the properties and you will see the version number.

2) Launch the game and start playing, then go to the system tab where you load/save and you will see the version number in the lower left corner.
