It doesn't work this way unfortunately. Models from the previous game wouldn't seamlessly fit into the engine nor would they magically look as good as everything within the engine.
The previous games, in order to be remade, would esseentually need to be completely redeveloped. New models, new textures, new sounds, new everything. Basically a new game. They could probably enhance the way the previous games ran, better graphics and such but in the case of Morrowind countless mods already allow you to accomplish this.
In short, no it wouldn't be possible for a remake within the new engine without a load of work to be done, far out of the range of a handful of modders to complete within a set period of time and for free no less.
There was a project done that basically made Morrowind out of the Oblivion based engine though I'm not entirely sure how it was done or how accurate it was.
Anyway, I'd say this is more a discussion reserved for the General Elder Scrolls Discussion so maybe a mod should move it.
Edit: There is a current project being done that it working to enhance the Daggerfall engine though. http://xlengine.com/?page_id=24
