What I want to know if you're allowed to choke a guy when you're ghosting the game (I hope not).

It is non-lethal.
Ghosting in Dishonored is considered just not being seen (via the achievement). You can do that without powers, just by pure movement (even without Blink). If you want to Ghost like in the Thief series without changing anything in the world then you'll have to challenge yourself.

Although having just played the first Thief, I'm probably the most incompetent stealth player ever.
