But I would so appreciate it if there could be a "select all" button in the data files section, It would be the most convenient thing ever for when I fancy a bit of vanilla or a little bit more specific play style. Or at least a way to shift + click a load at once?

Wrye Bash either features, or will feature, profiles you can create for different mod setups. Allowing you to switch between different loaded mods.

Someone in the know can probably help more :)

Set up a load list in Wrye Bash, right click on the column headers under the tabs, and click Load -> Save List, or Load -> the list you want.

So I have a list for vanilla play (just the game, update, unofficial patch), and another for using/testing a different water mod. The latter has its own Bashed Patch and ASIS file too.

Skyrim's pesky behaviour with scripts means its not as versatile as this function was in Oblivion, Fallouts and Morrowind, but it can easily handle "subsets" of lists instead of completely different mods fine.

You can also use the Profiles, and it not only changes your mod load order, but changes the path to your Save folder in the INI. Wrye Bash creates a subfolder for each profile in the saves folder.

As mentioned, saves hold onto some scripts, so the benefit for Skyrim isn't that you can switch mods in and out willy nilly, but that you can have say a Thief profile with all the mods you want for a thief playthrough. You can then switch your load orders around for different saves and playthroughs :)
