I buy. Also thinking about GTX 660s (not Ti) in SLI but I want a system that will last. Good/bad?

Waste of money IMO. But hey, go ahead.

Unless you are just completely, over the top, swimming in cash rich, you probably don't need two 680's

It might be overkill now but I'm thinking of the future.

The future will have cards twice as powerful for half the price.

Only buy what you need now. There's not going to be some massive increase in system requirements until the next generation of consoles takes off.

One 680 or two 660s in SLI?

I'd say just one 680. You really won't need to upgrade any time soon, and by the time you do it will probably cost you the same as buying that second 680 now.

Unless, as I said before, you're rolling in the dough and an extra $600 added to the bill (or whatever they cost now) means absolutely nothing to you

What resolution will you be running at OP? A single GTX 680 is overkill for even 1920x1080 in most games. What do you plan on playing? What are your other system specs (RAM, CPU and Power Supply)
