Set a goal for yourself in-game. Like for me, it's actually hunting down and actually reading the Wolfqueen books, the Dance in Fire books, and the Argonian account. Been with it since Morrowind, never once sat down to read them.
Also, try role-playing a little.Even something as silly as what I do- doing a running narrative like you see in Mind of Freeman.
For example.
"...Man, I never have any salt in the house, and everything I wanna cook needs salt. I'm a master alchemist. You would think my cupboard would be full of every known herb and spice known in existence. But no. I'm saltless. Like a wild animal...Nah, I'm sure wild animals have better access to salt than I do...Ahhh, it's after eight, Arcadia's closed. But you know, I come in often enough, I bet she won't mind if I shimmy in and borrow some salt, leave some coins on the counter and call it good. I'm good for it, I'm her best customer. Hmm...Then again, she did overcharge me for those mountain flowers. When you think about it, she owes me! Heck, everyone in Whiterun owes me. I'm the [censored]ing Dragonborn. You know what, it's fine. I'll just go over there and take some salt for my dinner. It's the very least these savages owe me."
