I'm pretty sure if someone dies after you've interacted with that person it will count as a kill. As in unconscious body gets eaten by rats or rolling into water, or lying too close to a fire etc. Same goes for deaths while you are interacting with a person. If your actions led to death (either direct or as a later, unintended consequence) it will count as a kill.
On the other hand, the game doesn't count it as a kill if you free a pack of rats and they kill someone as long as you didn't interact/hurt that NPC.
In your specific case, although it is probably quite the extreme example, I would believe that if the person died while you choked him, even if the "killing blow" was not delivered by you, the game will probably not be able to differentiate between that. You did something to someone, that person died = kill.
