All of Valenwood will be accessible at launch right? Does anyone have any word on if Valinesti will actual move based on the time of year like it should in the lore? I'm really hoping to see this city in the game. It would be the most breathe taking sight.

I'm not sure. A good way to do it though would be for you to enter the city, and then get off at a different location - or perhaps just every so often.
