Need Some Tips on Skills.

I've had the game since release but been tied up with other games and just now starting to play this. I'm curious though, about how many different skills should I invest perks into? I have both DLCs if that matters.

So far: (Only level 5)
One-Hand
Archery
Heavy Armor (I know this is strange to use along with sneak, but I picked this as I don't like the look of the higher-end light armors, bad choice, should I go light?)
Sneak
Smithing
*I was thinking about investing in Restoration as well, but not sure if that's worth it.*

I want to be fully invested in a few skill-sets as opposed to a 'jack of all trades.'

A few other questions:

Is there a certain ratio I should use to level my Health/Stamina, so far I've went 2:1.
Is sword/board better than dual wielding?
What magic schools come in handy, or should I not invest in any if I focus on One-Hand?

Looks a decent set for a warrior who sneaks (get the Muffle perk for Sneak and your heavy armour won't matter). Restoration is good but you don't need it, just use potions you buy/make

2:1 is a decent health to stamina ratio. You could get by with less but if you want to sprint or carry lots its useful to have more than the base 100.
S&B is very good defensively, dual wielding does a lot of damage but you can't block when using it. If you go S&B add Block to the skills you need to develop
You certainly don't need Destruction with One-Handed and Archery. Conjuration might be useful for a meat shield but I'd suggest concentrating on a few skills rather than spreading yourself thinly
