Whenever you enter a shop or tavern, you never have to
wait your turn for anything. You can just talk with the bartender/merchant straight away. I think it would add a bit more to the immersion if you had to maybe wait, what, 20 seconds or so to purchase a product in a shop, as you'd have other people browsing and buying apart from yourself, or have a bartender say "I'll be with you as soon as I can, just serving this other customer".
Would just give a town a bit more life. For example, you could have a couple in a jewelry/clothing shop ("Honey, you've already got ten pairs of shoes, do you really need more"), an alchemist in an ingredient shop, a mercenary looking at armours and weapons or even a kid pleading his dad to buy him his first bow etc. Anything, really. Even just general townsfolk browsing a general goods store.
