I always play either a Nord, Dunmer, or Imperial so I want to branch out. However, at the same time I want to make each class for each race, so they feel completely different than each other. Heres is what I came up with to try to be unique and stay to the lore. Note my Nord isn't listed because hes going to be the tralier Dragonborn, along with being my only dragonborn.

I've done pretty much the same thing - I don't think I'd be able to say I've 'done it all' if I didn't. I've made two Nords, and have yet to play my Khajit (who is waiting patiently in The Sleeping Giant) so I've done 10 playthrus to level 50+.

I've followed the builds in the strat guide, but added roleplaying twists to give my characters some personality. eg my Dunmer spellsword is a Daedra worshipper, and my Nord female is Jordis the Sword-Maiden.

I'm still planning more characters, so I could end up doing 16-17 complete playthrus. Definitely got more than my money's worth from Skyrim. GG
