New Gaming PC with dual monitor setup

Hi,

Can anyone please advise on the following PC setup running with dual monitors? I've been holding off playing this for a while until I buy a new PC and the new one will be this spec or at least very close to it.

As well as the above spec, I'll probably play Skyrim on one monitor while browsing the internet or doing other stuff on the other monitor. Will this be a problem or should I even consider running the game across both monitors instead? And does it matter whether I use full screen or windowed mode for the above?

I'm also unsure at the moment whether to go with Windows 8 or stick to tried and test Windows 7 for now?

As for the rest of the questions:

Do what you are more comfortable with; you need to use windowed mode for using a single screen for the game while using the other for something else; Windows 7, Windows 8 is a train-wreck.
