Not all my characters fit the role of a big estate owner, so how about small hovels or a little cabin in the woods or on a mountain slope...does anyone know if small homes are build-able or is it "big" only?

I would suspect you have the choice to keep the house small and don't do any additions to it.
I just don't think there's any choice to have it built on a mountain, but a Little cabin in Falkreath would be nice (what I'm gonna get too)

I think they all start as small houses. You can just decide not to make it bigger.

All of them start as small houses, they just get bigger as you keep building and adding new rooms. You can stop building at the point you think you like.

I think the one they showed in the Trailer is the Max. The Lookout might be the Enchanter tower

Yes, they all start fairly small (it talks about 1 room cabins) and you can make them bigger.
