so i see they've added arrow smithing (yay), but is there not a way to craft crossbow bolts? went through the ones i picked up at the beginning pretty quick...

You only craft Crossbow bolts if you do the Dawnguard Questline. If you join the vamps (past the part where you accept Harkon's "gift") you will no longer be able to obtain Crossbow schematics from the Dawnguard sidequests. As a side note, if you join the Dawnguard, you can still become a vampire lord later in the game so you can get the upgraded crossbows AND be a vampire lord

All arrows can be crafted! And thats [censored] that you can't use the crossbow if you're a vampire, screw being a vampire

there is none. Dawnguard is superior in every way possible. Unless you want to just play a different storyline.

vamps get items to enhance Vamp Lord form and a shrine like buff that makes you do more damage with vamp

Lets just face it....being a Vampire Lord is stupid because the effects really aren't that cool, you'll try it once and then never think to use it in battle....just like the werewolf power......so lame

So you're basically saying that if you accept the very first offer to become a Vampire Lord, that's it? No bolt crafting for you? That's a bit myopic of them if so... not a huge issue in the long run to be honest, but still, a bit disappointing.
