No, you just build the 2 single beds in the main hall, and be sure to build the dresser, have to have that too. You do not have to build the bedroom wing.

For role playing, I like to have beds for my steward and housecarl too, so I built the bedroom with beds for me and the children, the housecarl and steward then use the 2 single beds in the main hall upper, but you don't have to have beds for them and they still stay.
