remove quest from journal?

Is there a console way to hide/remove a log entry from the journal? (I don't want to compleat it, just hide it.)

Or a way in the creation kit to hide the log entry only for a particular stage?

If there is no log entry, for a stage, then no log entry will be displayed. So first thing to think about is can you get away with no log ... often you can, as player didn't need to see what needed doing ...depends on your quest

If this is a vanilla quest you are editting, then ... no, no way to do it (unless you edit the vanilla quest and remove the log entry ... but you shouldn't be editting vanilla quests if at all possible .. so I wouldn't do it).

Thanks for the info, would there be an issue with editting the text only in a vanilla quest log?

I would say that the edit would be safe enough (I can't think of a compatibility problem with doing it, anyway ... Not for such a small change)
