Multiple Character help.

Okay so, i do not roleplay hardcoe, but i never fast travel, wait, and i never loot weapons or Armour. That being said, i am completely lost on how to do this.
I have never finished any questline for Skyrim, so it's still all new even though i got the game Day 1 of launch. At the moment i am playing a Khajiit and i am loving the Assassin playstyle. Mainly Archery and Sneak skills and minor illusion use. But for this character ONLY i wish to play the Brotherhood and maybe Thieves questline, because i do not want to rush this game like i did with Oblivion.
So this is what i plan, different characters for each questline.
Nord for the Stormcloaks, Imperial for the Legion, Redguard for the Companions and so on. But i just need to understand few things.
I already plan to build estates for different regions, but how much do you explore with one character? Do you do the side quests with all of them? I personally don't mind doing the side quests as most of them are pretty fun and rewarding. But is this how it's done? Would you explore the entire map with one character and explore again with other ones?
It's why i am confused i don't want little from a playstyle i love and too much from one i don't find interesting. I like it balanced so i was just seeing if anyone else does this, doing side quests again with several characters and exploring already explored regions but with different playstyles.
I would rather make a certain character for a specific guild and playstyle rather then storming through the quest's with only one character, i have had hundreds of hours gametime but i deleted all my previous saves due to stupid bugs and glitches which are now removed. So if you can let me know if doing the side quests and exploration all over again with a totally different playstyle is still considered roleplaying i'd appreciate it.
