Are you looking for an unique new build? I think I have one for you: The Pelgrim!
You know those people in Ivarstead that climb up to High Hrothgar? You can become one too!
You can wear armor you like, I prefer fur armor. Your goal is to 'take care' of the Greybeards and bring them food.
So, you buy food, steal food, or just travel a bit and see what you can take with you, and then after 3/4/5 days you return to the 7000 steps and you bring them the food.
You don't have to bring them food all the time, just travel, but when you feel like it, you bring them food.

I think it's a pretty unique build/class.
