How difficult is it?

I'm planning on making the switch to PC by building one soon and have some experience with modding for older PC games but I was wondering how difficult it is to create mods for Skyrim?
My plan is to make the following:
-My own mead hall and a main NPC for the mod as well as several other "atmosphere" NPC's to fill the mead hall.
-A quest line involving the main NPC and perhaps a small side quest for another (a brawl with NPC or fetch quest)
-AI so the main NPC can be a follower during the questline as well as having dialogue and voice acting
-A new enemy type for the questline that can work off an existing model (example: frost giants in dawnguard)
-A new weapon model and armor
-Music for my mead hall that's either from the OST or my own music

The quest will take place somewhere within Skyrim as I won't try to bite off more then I can chew by attempting to create a new area but I may want to create a new structure outside in the land somewhere.

I'm wondering is my reach exceeding my grasp with this or is it something that can be done by myself? I hear the creation kit offers tools to make creating mods easier but I wonder about creating the new weapons and armor textures and making sure the AI is smooth and works well with quest triggers

Any advice or tips with this would be greatly appreciated.
