Fallout 3 is excellent. FONV is okay (if you like over the top spaghetti Western content... way overdone... and far less interesting characters than FO3). Note that the FO community was very split with FO3 and NV. However, if you love open world exploration with tons of content, FO3 is probably Bethesda's best effort to date.
Morrowind is probably the best actual roleplaying computer game ever done, so far. Bethesda started shifting to emphasis on action over roleplaying with Oblivion and continued this with Skyrim. To be clear, keep in mind that roleplaying relies on the character's abilities, not on the player's abilities (i.e., roleplaying has nothing to do with hand-eye coordination, player reflexes, etc., and relies on calculating outcomes based on the character's skills).
Oblivion is gorgeous to explore and was one of the most ambition games ever made when it came out. Oblivion was used as a prime benchmark test for PCs along with Crysis. I hindsight, some of Oblivion's shortcomings happened because it was supposed to be a launch title for the Xbox 360.
Basically, for cost to benefit (i.e., play value) Bethesda's Fallout and Elder Scrolls are some of the very best value available, particularly on PC with mods.
