Running totals and sleep poisons

Hi, I have a couple of random questions.

-Is it possible to have a kind of 'running total' over a number of quests? I'm trying to create different endings to the questline on the outcome of certain events, ie how many people are killed during a certain quest. I figured the easiest way to do this would be to have each event adding or subtracting from this hidden value, which would dictate the ending. I'm unsure how to go about it though.

-Sleep darts? Is it possible to create a poison that would make enemies ragdoll and be lootable, but be alive as well. I suppose they would have to either wake up after a certain amount of time (and become alerted) or be reset when I leave their cell or something. Any ideas?
