I'm currently playing a lv48 character with maxed out smithing, enchanting and self-enchanted dragonscale armour, jewelry and Chillrend.
Absolutely nothing can stop me, ever. I finish dungeons in a few minutes. There is no challenge left for me.
This is my first and only character so far (I'm not much of an avid gamer).
Since I've lost any sense of progress many levels ago, I've decided to stop right here and start a new character. I've been told the Requiem mod increases the difficulty, so I'm going to try that.
There is one thing left though that imbalances the combat too greatly to be overlooked- the potions, pretty much inexhaustible supply of cheap, instant regeneration that makes your actual stats insignificant.
The simplest idea I'd like to see implemented is changing all the Health, Magicka and Stamina regenerating potions to work ~30 (or even more) seconds after they've been drunk. This way, you can't pause the game in the middle of a combat, surrounded by three Draugr Deathlords, chug a few potions, unpause and act as if you weren't near death a split second ago.
Is this easily doable? Intuition tells me it is (at least with SKSE) but I might be wrong.
(also, are there any mods which prevent smithing+enchanting from being so overpowered?)
