...ok that's nice, I only noticed because I clicked on the wrong display tab in steam but clicking on the +3 show list thingy it says unlocked next to everything so...what are the three it says I don't have that aren't listed?

The Hearthfire achievements are the ones that don't display until they are unlocked, so presumably you haven't done three of those.
