How efficient is CrossFire?

I'd go with the 1GB of faster RAM, personally. Probably won't make much of a difference either way, though.

GDDR5 and GDDR3, when the GDDR3 is twice as much in terms of amount, is pretty equal though - or so I keep reading?

What games are you attempting to run? The 7660D by itself is okay for some games.

Most modern games. My favourite graphics card, in an ideal world, is the Nvidia 660. But, I cannot find a suitably priced processor to pair it with.

1GB or 2GB of GDDR3 or GDDR5 is probably all going to be the same with that GPU. The video RAM isn't going to be the limiting component at the resolutions you'll be running games.
