I'd say from tes 3-5. It's a tough question since none of the games revolves around this timeline of ESO. But I'd say Morrowind contains the most amount of lore and depth so play that first either way. Also if you do it in that order you wont complain as much with how bad the Morrowind combat is seeing as how engaging it is in Skyrim.
But yeah, if you're gonna play them all play them in order. If only one; go with Morrowind.
EDIT: Then again Oblivion does offer a more culturally diverse environment... It's really hard to say, what faction do you intend to play?

Thats a good question! I dont really know the races so far but all I know is that I like to play sneaky/rogue-ish so maybe there will be a "better" race in each faction that will be a better choice... But to give you an idea, I have a crush on that assasin in the ESO teaser video
I recommend playing all the games. But as a new player Morrowind might be a bid too aged for you. If you JUST want a basic understanding of the universe, then a lil UESP reading wont hurt. If you want to take a look around in cyrodill (The upcomming PvP zone in ESO) then check Oblivion out. If you want an easy introduction to the universe, then i'd say Skyrim is most user friendly.
The combat be a bit like neverwinters i think, hopefully a hole lot faster and less clunky.
Nothing since Zenimax ignores some aspects of the lore presented in those games. But just read lore on the imperial library,will prepare you for eso.
