I've been fiddling about with the profile settings but cannot figure out how to disable this.

How do you stop receiving emails when someone quotes you on the Forums?

your profile setting there is an option to stop receiving emails.

Under 'My Settings' go to 'Notification Options' then 'Notify me when someone quotes my posts (and I'm not already following)' then disable it.
