Has anyone had the chance to play ESO on one of the next gen consoles yet (like at QuakeCon maybe), if so how was the gameplay, combat, graphics, etc.

There is no way to know what the combat is like at this point. The game is still in beta. Anything that is out can change, for better or worse.
