This is a newbie question, - I aplogise.

Still, I've been around various forums for the last few hours and couldn't find an answer.

Here's the question: when I choke someone, the body drops. Automatically. And somertimes to disastrous effects (it will alert others, or the person will die).

Is there any way to avoid this? That is: is there any way to choke and not drop the body - indeed, to drag it away to where you wish to leave it?

Yeah. Haven't played for a while, but I remember that you can. On PC it is done by pressing F ("action" buttton) just after the choking. But be careful - if you press it before the choke-o-meter is full the guard will headbash you.
