I'm not a musician or a programmer...(yet) but I would imagine that there should be an app or program that listens to or records a piece of music and gives back the notes used.

Yup here it is now you can use this to figure out the notes for daggerfall

I have my doubts it currently exists in sheet-music form to be honest.. I'd say your best bet would be find someone who can play music by ear, and try to have them recreate it for you in sheet music form (i'd do it, but sadly I don't have quite that strong of an ear for music)..

http://www.gamesas.com/user/2495-interkarma/ made the excellent http://www.dfworkshop.net/downloads/old-tools/daggerfall-jukebox/ which can save the Daggerfall music as normal MIDI files.

So use that, and then open up the saved MIDI file in your MIDI sequencer of choice, and voila, you should see the notes.

Not sure whether this is good, bad or indifferent, but it claims to convert MIDI files into sheet music: https://musescore.org/
