You wouldn't be able to as console versions reward you with an achievement so that would kinda be cheating for it lol

I would think if it gives you the option in the menu, you should be able to turn it on and off at your own discretion.

But it seems that isn't how it works.

The wiki seems to suggest that the reason you can't turn it back on again (by the way, this is fairly easy to test; just turn it on, then save, then turn it off and try to turn it back on. If you wanted it on, just reload the save, and if you didn't, then no harm done) is that the game keeps tracking your basic necessities (food, water, sleep, etc) so they will run down (or build up, I guess, is more accurate) even if hardcoe is turned off, but it just doesn't matter if they do. Turning hardcoe back on at that point would kill you instantly.

I don't know if that's actually true, mind you, because it was written pre-release. If it is the reason, I think it's kind of a lame one anyway, to be honest, but it's also possibly fixable via mods. But the tl;dr version of this is that no, you can't turn it back on.

I'm not at all sure because I've not done it myself, but in an interview with Jason Bergman it was said you could turn it off and on at any time:
http://blog.us.playstation.com/2010/10/14/your-fallout-new-vegas-ps3-questions-answered-hardcoe-mode-morality-combat-and-more/comment-page-3/
What can you tell us about the new hardcoe Mode?
hardcoe Mode can be turned on or off at any time, although if you want the hardcoe trophy, you have to turn it on when initially prompted and leave it that way all the way to the end of the game. When it’s on, players will have to eat, sleep, and drink water every day. In addition, ammo has weight, companions can die, Stimpaks heal over time, and damaged limbs can only be healed with a Doctor’s Bag.

I'd love to have it confirmed by a member playing it though.

From what I herd in an interview with Todd, you can turn it on, then off anytime you want, and then on again later. BUT if you do this, and complete the game in hardcoe mode, you do not get the achievement at the end though. So yes you can turn it on or off when ever you want. I am on the 360, why would it be in the options if I can't turn it on or off when ever I want?

Yup. From page 11 in the manual, "You may toggle hardcoe Mode at any time via the options menu, however in order to earn the hardcoe achievment you must play the entire game, from the point you are first prompted until the endgame sequence without ever turning it of."

Looks like the wikia is fixed now as well. Wikis are often full of errors at first, but as more and more people add info, they become the best resource about the game ever.
