This is probably futile but wanted to check in to see if there was an update or mod
or workaround because winning is waaaay too easy.

Considering the other issues with Caravan that are actual bugs that still haven't been fixed as of the latest patch such as the '1/2 ante winning bug' and the 'adding duplicate cards crash', no I wouldn't really get your hopes up for an AI patch when it comes to Caravan (or the base game for that matter). Shame really, it's an interesting game that could be a lot of fun if the AI opponents weren't brain dead as you point out.
