Is there a way I could go back and change the item Im searching for for Veronica after having chosen one already? (I think I found it and sold it pre-quest).

If you find out how, you'll be the first. Many people have run into this exact same situation, and have been forced to reload a previous save game, or simply avoid the Quest as it is not necessary to complete the game.

I thought you could still change it by talking to her. I can't remember the line exactly but it should be accessible until you actually recover the object with her (with the exception of the plant growth data if the OSI quest is completed).
