I love Star Ocean 4, but that game has extremely limited customization and is generally pretty linear (The Item Creation system may appear to be complex, but 90% of it is useless). I wouldn't bother if you're looking for that sort of depth. It has a fantastic combat system, though, and I absolutely love that game's soundtrack.
Actually, if you haven't played it, Tales of Vesperia on the 360 is probably one of the best JRPGs, customization-wise, ever made. You can unlock at least half a dozen costumes for each character, and while the armor doesn't change appearance, every single weapon in the game has a unique look, and the combat system is, IMHO, probably the greatest one in an RPG ever. Plus, it's an extremely long game with a lot of optional content, so it would definitely murder time.
