So, after you get to level 50, will you still be able to add points in either Health/Stamina? Since I heard all NPCs stop leveling with you after 50.

I would say no, considering that selection was only available upon leveling up. Independent stats will still raise to 100 I believe though. (light armor, smithing, etc.)

I don't think so.

After level 50, advancing slows down considerably (soft cap), and there's hard cap at level 80+.

But then there's always:

player.modav health ###
player.adlevel ###


I suspect there will be a mod that removes the caps in the future.

Yep, you can. I believe that guards will still continue to level, but most other critters will indeed stop at 50.

I've gotten two different responses here. Can you add Health/Stamina after 50 or nor?

Yes, you can.

You can add to your Magicka, Heatlh, or Stamina everytime you level up and you can recieve a perk every level as well...

You still level perfectly normally. The only reason mobs stop leveling is because by that point there is little chance you're leveling off of skills that would add to your combat effectiveness anymore unless you dual wield a bow with a dagger and a war hammer strapped to it in one hand and an illusionary conjured fireball in the other while wearing medium armor and sneaking.
